I have a 2020, and haven't had that issue but since the knob is clearly functioning and the screen shows the number moving but not the volume bar I would start by looking at it as a software issue. I would see if there are updates available. Look up Nissan Over the Air Update. You have to connect the vehicle to your home wifi to check for updates.
