You would find their inventory empty, if you wish to trade with them. Merchants will reset after 2 days, but not if you are hanging around. Once you empty it for the first time, it won't get new stuff until you look at the inventory of the Khajit merchant who shows up just outside of Dawnstar every so often. That being said, here's my question: How often does that khajit merchant show up there? The invisible chest in dawnstar is the shop chest for the Khajiit Caravan. You can reset the contents of the chest by waiting for a caravan to come into Dawnstar. If you talk to them and they have a full inventory, you can loot those items from the chest.
